Christmas Canon …. Rock
Once again my love of classical music surfaces AND it features Transiberian Orchestra. Pachelbel’s Canon has always been my most favorite piece of classical music. I can hear it over and over and never tire of hearing it. Originally, TSO had this song on their first Christmas Album and it was sung by kids, however, in concert they’d get their female singers to do it and it rocked the house. So I was very excited when they recorded it and offered it to the masses.
I also offered a recipe today, and I am going to use one that I just tasted this week. It’s a coworkers recipe for Red Velvet Cake which she got from a restaurant called The Bubble Room and let me tell you this will crash your diet. It is not diet friendly AT ALL- which of course means it’s yummmmmy.
Red Velvet Cake
2-1/2 c. self rising flour
1 c. buttermilk* Frosting:
1-1/2 c. vegetable oil 1-1/2 lb. butter (only)
1 tsp baking soda 10 oz. cream cheese, soft
1 tsp vanilla 1 lb. box confectioner’s sugar
2 1 oz bottles of red food coloring 2 c. chopped pecans
1 tsp unsweetened cocoa powder
1-1/2 c. granulated sugar
1 tsp. white vinegar
2 large eggs
Preheat oven to 350. Mix all ingredients with mixer. Grease or spray 3 9-inch pans. Pour batter into pans and bake 30 minutes. Cool for 10 minutes, remove from pans and cool for another 20 minutes.
Frosting: Combine butter, cream cheese and sugar and beat until fluffy. Fold in 1-1/2 cups chopped pecans. Top cake with remaining pecans.
*Option: add 1-1/2 tsp. white vinegar to regular milk and let it sit while you’re mixing the dry ingredients.
